Spinach Dip

This is an easy Mexican-spinach dip.

1 pkg. frozen chopped spinach
1 pkg. cream cheese
6-8 green onions, finely chopped
4-5 roma tomatoes, diced
1/2 can chopped green chilies
12 oz. package of grated Mexican cheese blend

Prepare the spinach according to package directions and drain thoroughly.

Thoroughly mix together everything but withhold about half of the grated cheese. Put into a 9" square baking dish and level the top. Evenly spread the remaining grated cheese onto the top of the dip. Bake in 350° oven for 30 minutes or until cheese on top is melted.

Note: I often double this recipe and bake in a 9x13 baking dish.

I recommend you serve this with either freshly fried tortilla chips (just quarter flat corn tortillas from the grocery store, deep fry them and add a little salt) or my second choice would be Silva's Tortilla Chips which you can find on the chip aisle in most grocery stores in this area.
